Kale is a member of the cruciferous vegetable family. It thrives during the cooler seasons of the year, grows wild on many different continents, and borders along the Mediterranean Sea. The cool-season nature of kale can sometimes be reflected in its flavor. The taste of kale can be varied from bitter or peppery and slightly sweet.
Choose kale with firm, deeply colored leaves and moist hardy stems. This veggie should be displayed in a cool environment. The leaves should look fresh, be unwilted, and be free from signs of browning, yellowing, and small holes. Smaller-sized leaves will be more tender and have a more mild flavor than those with larger leaves. Available throughout the year, it is more widely available, and at its peak, from the middle of winter through the beginning of spring.
